You'll learn how to restore a worn or damaged edge using a Tormek sharpening system before finishing the edge by hand with diamond stones. Along the way, you'll learn what makes a knife cut well, how to maintain the edge between sharpenings, and how to maximize edge retention so you spend less time sharpening and more time cooking. Bring one or two kitchen knives that have seen better days. By the end of class, you'll take home a knife that cuts like it should—and the skills to keep it that way. Designed for home cooks who want to learn how to restore and maintain their knives. No prior sharpening experience required.
